I love to try new tasty treats, especially when I get to play with my grandchildren making them. On deck today, Oatmeal and Chocolate Chip Protein Balls. They are gluten, soy, egg and dairy free. In addition, the ingredients we used were Non GMO so totally tasty and good for you!
There was fun to be had when the struggle was to get the honey to drip faster out of the container. My assistant was a little confused at why I would heat the honey in the microwave to accomplish this goal, but we got there.
These tasty treats had me a bit confused too. The consistency was not what I expected while mixing everything together. To begin with, we were mixing with a spoon and getting nowhere fast! So, out came the hand mixer and it was much easier. Initially, looked as though it was going to be too dry and fought with myself.. not to add anything. In the long run glad I didn’t. For the most part they were easy to form, but they needed some grip strength and held together nicely. Little bit crumbly to begin with when we started rolling, but we got it sorted out. Formed into about 1″ balls we made about 2 dozen. The about… my quality control guy did some taste testing, so more is possible.
On the Eema keep it simple scale, these are an 8. But on the Eema tasty scale, a 10
The ingredients are quite simple:
1 cup oatmeal,
1/2 cup Protein Powder (Arbonne, is my choice here, as it is plant based)
2/3 cup shredded coconut
1/2 cup peanut butter (I use almond butter)
1/3 cup honey
1/2 cup chocolate chips
Stir all ingredients together until thoroughly mixed.
Chill in the refrigerator for half an hour then roll into balls.
Store in an airtight container in refrigerator for up to 1 week.
